Apple Oatmeal Cookies


1-1/2 cups quick-cooking rolled oats (uncooked)
3/4 cup all-purpose flour
3/4 cup whole-wheat flour
1/2 cup brown sugar, firmly packed
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1-1/2 tsp cinnamon
1/4 tsp nutmeg or allspice
1/2 cup raisins
1 cup finely chopped, peeled apple (such as Granny Smith)
1 egg, slightly beaten
1/2 cup honey
1 tsp pure vanilla extract (optional)
1/2 cup oil
1/3 cup milk


Preheat oven to 375 F.

In medium bowl, combine oats, flours, brown sugar, baking powder, baking soda, salt and spices. Stir to combine. Stir in raisins and apples.

In large bowl, combine egg, honey, vanilla, oil and milk. Stir in dry ingredients. Mix to form a smooth batter.

Drop batter onto ungreased baking sheets, using a rounded teaspoon of dough for each cookie, leaving 2 inches in between. Dip your fingers into water. Press the dough down to about 1-1/2 inches in diameter.

Bake for 10 to 12 minutes, or until lightly golden. Remove sheet from oven. Transfer cookies to cooling rack.

Okay - what about the easiest PB cookies in the world?

1 c. peanut butter
1 c. sugar
1 egg

Bake at 350 till done.

double or triple the recipe if you want.

I use butter for flavor, which due to the water and whey found in the butter- also produces a crisp cookie.

If I want softer cookies I use shortening. But that lacks the buttery flavor.

So for both SOFT and FLAVOR, I almost always opt for margarine. I have also used butter-flavor Crisco too with really good results!

I have also made a no-flour pb cookie recipe like the one mama posted and it is amazingly good! YUM, mama!

Oil? I personally have never tried it w/ cookie dough...

Oil has been used quite a bit in various cookie recipes.

I don't bake with "margarine" anymore - it's not true margarine that we had years ago and the water cvontent and all the crap they put in it - it's butter, Crisco, oil or applesauce here.

And those PB cookies - they couldn't be easier! Three ingredients, easy to remember and they mix with a wooden spoon! Easy clean-up - one bowl, wooden spoon and baking sheet!

Been making them over 50 years!

Thanks, Mama Mangia and all—this is very helpful. We have a hard time getting margarine, and sometimes butter, here in Caracas. Even oil disappears at time (not to mention, sugar and flour), so these ideas are great.
