I'm a nuker when it comes to veggies.
I made stuffed peppers tonight for Tuesday's nights dinner.
1 lb. ground beef
1 can of Ro*tell tomatoes & chillies,
1 can of kidney beans with sauce,
1 cup of white rice (made separately)
1/2 pkg. of chili seasoning
1 cup of taco cheese
I made the mixture above & stuffed 2 Red sweet peppers and 1 yellow sweet pepper. I had some mixture left over & we sampled it, mm Good!! Here is a picture of the peppers. Cookie

Vegetables are essential to the human diet. We get a great deal of our daily vitamin content from vegetables. We need to make sure that how we cook them does not drain vitamin contents and benefits of consumption.I like to usually grill, roast or steam my veggies. I almost never boil them.Thanks for the info.
