Lunch for One Ideas

I know this isn't dinner, but I couldn't find a better cagegory.
I work from home and I am always trying to come up with lunch ideas for just me. I don't want to resort to those frozen dinners, yuck.
I have leftovers, when we have them, and lots of salads. I was just hoping you all had some good ideas.
 
We like to keep a bag of buffalo chicken bites in the freezer. These can be easily made for lunch in the oven or the microwave. We supplement them with celery and carrots sticks.

We also like to have Pot Stickers (Chinese Dumplings) for lunch. Easy to make just boil some water and cook them for about 8 minutes. The bags we buy even come with their own dipping sauce.

Another idea we like is to cook some Basmati rice with several links of Chinese sausage on top. When rice is cooked just slice the sausage and mix with the rice. Add some soy sauce and enjoy.
 
I make a "fancy" Ramen Noodle dish with ramen noodles, chopped up leftover chicken, spring onions, and a can of low sodium chicken broth. If we happen to have some fresh bean sprouts on hand, then a 1/2 cup of them added at the end makes a nice meal. Sometimes I slice up a couple of the baby carrots very thin and add them too.
 
I'm at home all day, but don't have much time to cook lunch with my little "helper" tugging at me constantly. Lately we've been eating quite a bit of mac & cheese, quesadillas (both chicken & bean/cheese), grilled cheese sandwiches, frozen chicken strips/bites....anything that's fast is fair game.
 
For lunches at my house we eat alot of soup. That can get boring so we try to change it up from time to time by either making tuna sandwiches, quesadilas ( we use corn tortillas instead of flour) with black beans, picode gallo abd cheese, BBQ beans and cut up hot dogs and the microwavable mac and cheese.
 
I have the same problem. My fiance works all day and I stay home and work. I usually just make myself a big salad or cook some pasta and stir some salmon and vegies in it. :)
 
I cook for two (for dinner) and only for myself (for lunch). I'll give a twist to my leftovers like if I have beef stew with rice for dinner, then I have beef stew with garlic bread for lunch the next day.

For stuff that I need to prepare something from scratch, I may do the following:
- Sardine sandwich (sardine, mixed with onions and lime)
- Instant noodles (add fishballs, minced meat, vegetables)
- Luncheon meat with bread
- I have pot stickers too (with light soy sauce and minced ginger as the dip)
- pasta mixed with leftover chicken and pasta sauce.
 
I would do:

Grilled cheese sandwich
Hot dogs
Soup
Leftovers

I can't say much, 'cause I often take advantage of the frozen meals! ;) I know it's not as good for you but I just never have much time for lunches.
 
Thanks for all the great ideas. I am always standing in the kitchen at lunch time, wondering what to fix.
 
I like the big bags of frozen ravioli or tortellini you can get. That way, you can make as much as you want. Pour some pasta sauce in ice cube trays and freeze them. After they are frozen, keep them in a freezer bag. This way you can also just get out as much pasta sauce as you need.

That is a really good idea. I will have to do this. There are times were we will eat soemthing spicy and one of the kids don't like spicy foods so I could make really quick pasta for her.
 
When it is just me I make a sandwich, or make a fried egg sandwich. Sometimes I just make a grilled cheese or eat a bowl of cereal. lol

Cereal is always a great meal. I love Fruity Pepples. My kids laugh at me cause they are not allowed to eat my cereal. If I did they would have it gone in a day.
 
I love eating Chicken Tinola for lunch. This is very easy to prepare. The ingredients are: chicken, ginger, small green papayas (peeled & cut), water, chili leaves, onion, garlic, salt and pepper to taste.

First, you need to saute chicken in hot oil. Add ginger, garlic and onion. Saute until onion is transparent. Season with salt then add water. Cover and simmer for 30 minutes or until chicken is tender. Add papayas to chicken and cook about 5 minutes or until papaya is tender but not mushy. Add chili leaves; cover pot and turn off heat. Let stand for 1 minute. Try it, it really tastes good.
