Easy Sugar Cookies

INGREDIENTS:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract

DIRECTIONS:
1.Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
2.In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
3.Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
 
I just made a batch of these. Ten minutes at 375 was just right for wonderful soft sugar cookies. Jon really loved these.
 
Same here Cookie lol. I love a good cookie recipe.
Jon's brother used to give me cookie cookbooks every year for Christmas. He also always expected a nice big batch of cookies when we all have Christmas dinner at his Dads lol. One of Jons fav cookies are eggnog cookies. He loves those around the holidays.
 
So Janie ya' think you're gonna get off that easy huh? I don't think so kiddo :) We need you to give us the recipe for these eggnog cookies now!!!! They sound different, and I have never heard of them before!

Eggnog Cookies

2 1/4 cups flour (all purpose)
1t baking powder
1/2t ground cinnamon
1/2t ground nutmeg
1 1/4 cup granulated sugar
1 1/2 sticks (3/4 cup) salted butter, softened
1/2 cup eggnog
1t vanilla extract
2 large egg yolks
1T ground nutmeg

Yields about 3 dozen cookies


Preheat oven to 350
In a medium bowl, combine flour, baking powder, cinnamon and nutmeg. Mix well with a wire wisk and set aside.
In a large bowl cream sugar and butter with an electric mixer to form a grainy paste. Add eggnog, vanilla and egg yolks and beat at medium speed

until smooth.
Add the flour mixture and beat at low speed just until combined. Do not overmix.
Drop by rounded teaspoons onto ungreased baking sheets 1 inch apart. Sprinkle lightly with nutmeg. Bake for 23 - 25 minutes or until bottoms are lightly browned. Transfer to cool flat surface immediately with a spatula.

I love to smell them baking. The nutmeg smells wonderfull.
Jons brother didnt care for them lol. His fav are the peanut butter chocolate chip recipe.

Here is a good cookie recipe I made last Christmas they were really good!
Raspberry Almond Shortbread Thumbprints:

1 cup butter, softened 2/3 cup sugar 1/2 tsp almond extract 2 cups flour
1/2 cup raspberry jam

Combine butter, sugar, and almond extract in mixer bowl and beat until creamy
(2-3 min.). Add flour and mix well. Cover and chill dough at least one hour. Shape into 1 inch balls. Make indentation (with knuckle or finger) in the center and fill with about 1/8 tsp. jam. Bake at 350 degrees 14 to 18 min. until edges are very lightly browned. Let stand one min. Remove from cookie sheet & cool completely. Glaze 1 cup powdered sugar 1 1/2tsp. almond extract
2-3 tsp. water Mix glaze ingredients together & drizzle on cookies when cool. Cookie :)

Chunky Chocolate Chip Peanut Butter Cookies

1 1/4 cup all purpose flour
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
3/4 cup butter or margarine softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1 t vanila extract
2 cups chocolate chips
1/2 cup coarse chopped peanuts

Combine flour, baking soda, salt and cinnamon in a small bowl. Beat butter, granulated sugar, brown sugar and peanut butter in a large mixer bowl until creamy. Beat in egg and vanilla. Gradually beat in the flour mixture. Stir in morsels and peanuts. Drop dough by rounded tablespoons onto ungreased baking sheets. Press down slightly to flatten into two inch circles.

Bake in preheated 375 oven for 7 - 10 minutes until edges are set but centers are still soft. Let stand for 4 minutes remove to wire racks and cool. Makes about 3 dozen cookies.

I usually leave out the chopped peanuts.

When I was little, my Mom added orange zest to both sugar cookie dough and glaze for sugar cookies- this simple added step added SO MUCH to the cookies!
 
I made a batch of these this evening. I was craving a warm home baked cookie. I used 1 cup reese peanut butter chips and 1 cup milk chocolate chips. VERY yummy! I left out the peanuts. Jon doesnt like them.

I Love pb, with chocolate. These cookies sound so good. I have this cookbook but never made that cookie recipe before. I made the Island cookies before the recipe is in that book. I Love coconut & chocolate together also. (I haven't made 70 most requested cookies and bars and brownies) yet... lol Cookies :)
 
I try one and really like it and thats the one I keep going back to instead of giving another recipe a try lol.
Pb and chocolate are my fav to. Sometimes when I make fudge I like to make pb and chocolate and then swirl them together.
