For diabetics you will just want to keep it low on the glycemic index. I wonder if you could substitute corn syrup for agave syrup? That is much lower on the glycemic index.

Here's the diabetic pecan pie:)
2 tbs. butter
2 large eggs
1 cup light syrup
1/8 tsp salt
1/2 cup Splenda
1 tbs. flour
1 tsp vanilla
1 1/2 cup pecans
1 unbaked 9" pieshell
1/2 tbs milk
Melt butter and cool. Add in order, eggs, syrup, salt, Splenda, flour, vanilla and butter. Beat mixture until blended. Stir in pecans until coated with mixture. Pour into pie shells. Bake at 350* for aboout 45 minutes to 1 hour.
