Ian, Thanks. I have copied your recipe and thoughts on how and what to do. Any information is helpful.
I may give it a little smoke on the pit then finish in the oven. Our new ovens have probes for the meat, and can be set for internal temp. Haven't tried them yet but will. CF:)
