This indeed sounds yummy, IC. I would love it! Was raised on cube steaks- Mom made them any number of ways- YUM!
Cube Steaks Parmigiana
A friend of mine serves these for just about every occasion:
3 T. flour
1/2 t. salt
1/2 t. pepper
2 eggs
3 T. water
10 saltine crackers, crushed
1/3 c. parmesean cheese
1/2 t. basil
4 beef cube steaks
3 T. oil
1 1/4 c. tomato sauce
2 t. sugar
1/2 t. oregano
1/4 t. garlic powder
4 slices mozzarella cheese
1/3 c. shredded parmesean cheese
Combine flour salt and pepper. In another bowl beat eggs and water. Place cracker crumbs parmesean cheese and basil in another bowl. Coat steaks with flour,egg then crumbs. Brown steaks in oil on both sides. Place in a 13x9 pan Bake uncovered for 25 minutes. Combine tomato sauce , sugar, oregano and garlic spoon over steaks. Bake 10 minutes. Top each steak with cheese and shredded parmesean cook 5 minutes longer or until cheese is melted.

1 can (16 oz) tomatoes, cut up
1/2 tsp salt
1 tsp oregano
1/8 tsp pepper

In large skillet, heat oil. Brown steaks quickly. Remove from skillet. Reduce heat. Saute garlic in pan drippings, 3 to 5min or until golden brown. Stir in remaining ingredients, except parsley. Bring to a boil, return steaks to the skillet. Cover and simmer 5 min to blend flavors and heat through. Discard the garlic and garnish with parsley.

Add a sprinkle of brown sugar, a sprinkle of dry mustard and some water; a splash or 2 of balsamic vinegar as well as the same for Worcestershire sauce; a bit of garlic powder/minced garlic and a bit of oregano and basil. Cover and simmer for about 15 to 20 minutes turning every few minutes.
