Wanted: Summer sandwich recipes

I like simple sandwiches with lots of fresh vegetables in the summer. Dark Bread with good butter and sliced radishes or cucumbers, Tomato and cheese or blt sandwiches. Oh and how about ham with really ripe peach slices?
 
Summer sammies????? definitely PANINI - anything goes with that! I love lettuce, tomato, onion, on any typr of bread, rolls, etc. slathered with mayo or vinaigrette or a sammie topper of some sort, sometimes pickles, sun-dried tomatoes, roasted peppers, cucumbers, possilby with cheese(s), and any type of deli meats, meats, veggies, etc.
 
Cathy, this time of year I only have 1 summertime sandwich on my mind. I plant the seeds, take care of the seedlings, wait for warmer weather and put the plants in the garden. Watch the plants grow, slowly until the heat builds and then the plants take off. Finally the fruit starts to grow. Then it's a waiting game for the red color to come along and say, " get out the bread and Miracle Whip". I absolutely love home grown, plant ripened big thick slices of tomato with a bit of salt and pepper with the juice just running out of the tomato as I try to eat the sucker with out jamming the whole thing into my big mouth in 1 shot. Especially the first tomato sandwich of the year. It's been a tradition with me, started by my grandmother over 45 years ago. Every year I'm chomping at the bit waiting for that 1st ripe tomato.

I don't like eating hot food during the hot days of summer because I hate heating up the house. I work out side and cook enough with the sun beating on me. Specially when roofing jobs come along. I like cold salad sandwiches like tuna, chicken, ham and turkey salads. If these salads aren't between slices of bread I'll scoop out a tomato and fill it with the salad. At times I'll use the burner on the grill to make Egg Plant Parmesan sandwiches, cheese steak sandwiches (my kids favorite) or sausage and pepper sandwiches.

1 type of sandwich I really want to try is the Greek Gyro. I'm not a big fan of lamb so I may try to make a Greek style meat loaf on the rotisserie using ground pork instead. The cooled meat loaf is then sliced very thin and served on a flat bread almost taco style with a sauce that very much reminds me of a cross between an Italian and Ranch dressings. Flat bread is very easy to make on the grill too.

AAAARGH, of course, lol. I hafta agree with the BLT. Around here that one is a must around here.

Caprese Sandwich
Ingredients

baguette
buffalo mozzarella
tomato
basil
balsamic vinegar
Directions

Slice buffalo mozzarella and tomato.
Slice baguette in half, length-wise.
Arrange mozzrella on top of bread.
Drizzle balsamic vinegar onto mozzarella.
Top with tomato and basil slices.
Add other half of baguette. (This sandwich is also delicious "open-face".)
 
Tortilla Wrap
Ingredients

flour tortilla
herb mayonnaise OR sour cream
chicken strips
grated cheese (try cheddar or jack)
prepackaged lettuce
avocado
green onion
Directions

Lay tortilla flat. If using herb mayonnaise, spread a thin layer of mayonnaise onto tortilla. If using sour cream, SKIP this step.
Sprinkle prepackaged lettuce onto tortilla. Top with chicken strips and grated cheese.
Slice avocado and chop green onion. Add both to tortilla.
Roll tortilla into "wrap". If mayonnaise was skipped, add sour cream on the side.
 
Taste of Summer Sandwiches

SERVES 4
4 boneless skinless chicken breasts
4 whole wheat hamburger buns
3 tablespoons light mayonnaise
4 small romaine lettuce leaves
1 roasted red pepper, cut into strips
4 slices red onions (thin slices)
1 green onion, sliced

Orange Ginger Marinade
1 tablespoon grate orange rind
1/4 cup orange juice
3 green onions, finely chopped
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon soy sauce
1/4 teaspoon salt

Orange Ginger Marinade: In bowl, whisk together orange rind and juice, green onions, garlic, ginger, soy sauce and salt.
Add chicken breasts; turn to coat.
Let stand for 10 minutes or cover and refrigerate for up to 8 hours.
Place chicken on greased grill over medium heat; spoon any remaining marinade over chicken.
Close lid and grill, turning once, until no longer pink inside, about 10 minutes.
Cut buns in half; spread cut sides with mayonnaise.
Sandwich lettuce, chicken, sweet pepper, red onion and green onion in buns.
 
I made for lunch today a open face (3 oz.) white albacore tuna salad on an sour-dough English muffin with 1tsp light mayo & 1 tsp. relish. You can top it off with some cheese of your choice and tomato if you wish.

Sometimes I will do tuna sandwiches on a toasted onion bagel with crisp lettuce & Tomato, and a slice of pepper jack cheese on top.

Chicken Wraps

My kids love these. I think McDonalds came out with them a few years ago but they are so much better and easier to make at home.

A good quality frozen fried chicken strips. I use 4 per person.
Ice berg lettuce
Ranch dressing
Grated cheddar cheese
Flour trortillas, softend as per directions, 2 per person.

Fry or bake the chicken as per the directions on package. Lay out softened tortillas and coat the surface of each one with ranch dressing. Try to keep the rest of the ingredients towards the canter of the tortilla to make it easier to wrap. Start with lettuce ripped into bite sized pieces. Place 2 chicken pieces over the lettuce. Sprinkle on the cheese. Add a bit more salad dressing over each tortilla and then wrap.

To soften tortillas I remove them from the plastic wrapper. Put them between two damp paper towels and microwave for 1- 1 1/2 minutes.

Use different cheese blends to make things more interesting.
 
I love to grill chicken breasts and slice them. I use a tortilla wrap with shredded lettuce, diced tomato, cheddar cheese, chopped scallion and ranch dressing to make a tasty wrap.
 
I like McDonald's chicken wraps to, Thanks for the recipe that's a Good idea. I use my microwave a lot for stuff, great for warming. Cookie :)
 
IC - you talk about tomato sandwiches! OMG I was raised on them. That and tomatoes and onion salad - to die for.
