Sounds like a good idea CF. I've done with salmon before with cast iron skillets on the gas grill. Major sear on the skinless side with the side burner then flip it over and put it in the closed grill opposite the lit side for 10 minutes.

JP, have to admit. I fry most of my fish, I grew up eating it that way and still do. Although have started doing blackened fish on the grill. I have tried the catfish and the talipia. I guess the talipia is from where ever but I am going to buy catfish from the good ol' USA. Haven't eaten salmon but canned made into Patty's. CF:)

I sometimes buy the whole filet from Walmart, product of USA but processed on Chinese ships I think. Each filet makes about four portions. Either blacken it as stated or simply grill it and serve with lemon-butter sauce. Ain't bad.
