A friend of mine had me try this and everyone seems to love it!

Banana peppers (as many as you want)
Shedded Cheese or cream cheese

Cut the top of the pepper of at the stem. Clean out seeds, and stuff.
(These can be placed into food saver bags and frozen). Place on a foil lined
cookie sheet and bake at 350 til pepper in tinder.

I have about 14 bags in my freezer. You can do this with with any of the smaller peppers, ( not sure how a bell pepper would turn out). I can take them from the freezer to oven and ready to snake in about 15 - 20 minutes. My teenagers love them.

One trick, Chevy, when making any sort of dish like that. Freeze them by first laying them out on a baking sheet. Once frozen, transfer them to the storage bags.

That way they don't stick together, and you can take out as many at one time as you wish.

Also, if you prep the peppers by making a slit in the side, instead of actually cutting off the top, the cheese is less likely to ooze out when you bake them.
