Today while at the Latino Market I actually found Prickly Pears, so I bought some and tonight made the salad dressing. I didn't have the taragon vinegar so I used red wine vinegar and it turned out so nice tasting, and has a very pretty color. I actually tasted the seeds before I threw them out and they had a nice flavor to them (I did not swallow them). I like the rose color at the center of the fruit.
And lo & behold there was a lady outside the front door of the store selling fresh home made tamales! Needless to say I had a nice surprise for lunch:). And since we aren't in Mexico I can eat the food & drink the water!
When visiting Mexico City I remember my mouth watering at all the street vendors foods and fruits, and being so disappointed that I could not indulge:(
