Nan- switch your pepper-jack to cheddar... sprinkle on some chili powder, and instead of cooking the onion- grate it raw atop the whole mess and you have chilaquilles! YUM!

Many yrs ago I used to make a really neat dish called Tamale Pie, that is the very closest I have come to making Tamales. The Tamale Pie was delicious, tatsy and a better meal than authentic Tamales. So I would get my Tamale fix, with-out all the work of making Tamale's, I have since lost the recipe:( Does anyone here happen to have a Tamale Pie recipe? I would love to have it if so.

Cathy, when I was a kid, my buddy's Mom used to make a delish tamale pie. I think she somehow incorporated bisquick and cornmeal into it. Is this the same as your's?

I do not remember using any flour or bisquick it was a corn bread type batter.

I love that too. I make it for us for brunch on the weekends. My husband LOVES it.
