Here is a good cookie recipe I made last Christmas they were really good!
Raspberry Almond Shortbread Thumbprints:
1 cup butter, softened 2/3 cup sugar 1/2 tsp almond extract 2 cups flour
1/2 cup raspberry jam
Combine butter, sugar, and almond extract in mixer bowl and beat until creamy
(2-3 min.). Add flour and mix well. Cover and chill dough at least one hour. Shape into 1 inch balls. Make indentation (with knuckle or finger) in the center and fill with about 1/8 tsp. jam. Bake at 350 degrees 14 to 18 min. until edges are very lightly browned. Let stand one min. Remove from cookie sheet & cool completely.
Glaze 1 cup powdered sugar 1 1/2tsp. almond extract
2-3 tsp. water Mix glaze ingredients together & drizzle on cookies when cool. Cookie
