MARASCHINO CHERRIES!

Yep - and they are great for cooking, baking, as well as garnishing your favorite drinks.

Chocolate Covered Cherry Blondies

2 cups granulated sugar
1 1/2 cups all-purpose flour
1/2 cup cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, melted
4 large eggs, lightly beaten
2 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained, coarsely chopped
1 (6 ounce) package semisweet chocolate chips

Preheat oven to 350 degrees F. Grease and flour a 13 x 9-inch baking pan.

Combine first 5 ingredients in large bowl. Add butter and eggs, stirring until smooth. Pour batter into prepared pan. Bake for 28 minutes.

Sprinkle marshmallows evenly over hot brownies; return to oven. Bake for 1 minute. Sprinkle with cherries; let cool.

Place chocolate chips into a 2-cup glass measuring cup; microwave at HIGH for 1 minute. Stir until chocolate is smooth. Drizzle melted chocolate over uncut brownies. Cool. Cut into bars

Cherry Cordial Cake

3 eggs
1/4 c. water
1/2 c. veg. oil
1 2 layer white cake mix
1 small box of cherry jello
3/4 c. reserved marashino cherry juice
1 (16 oz) jar maraschino cherries; drained and coarsely chopped

Preheat oven to 350. Beat eggs on high speed until foamy, about 2 minutes. Blend water and oil with eggs. Slowly add cake mix and jello, beating constantly. Add maraschino cherries juice and beat for 2 additional minutes.

Gently stir maraschino cherries into the batter.

Pour batter into a greased and floured 12 cup bundt cake pan and bake for approximately 45 minutes or until cake tester comes out clean. When cool, ice with chocolate glaze.

Glaze
6 (1 oz) squares of semi-sweet baking chocolate
2/3 c. evaporated milk

In a small saucepan, combine chocolate and evaporated milk. Cook and stir over low heat until mixture comes to a boil. Lower heat and cook gently for 3 to 5 minutes, stirring constantly until thickened. Cool, stirring occasionally.

Cherry Squash Cake

1 c. red maraschino cherries, chopped
1/3 c. reserved cherry syrup
3 eggs
1 1/2 c. sugar
2 1/2 c. sifted-all purpose flour
4 T double acting baking powder
1 1/2 t. cinnamon
1 t. baking soda
1 t. salt
1 c. salad oil
2 c. peeled & grated raw acorn squash (1 medium)
1/2 c. finely chopped walnuts
confectioner's sugar
stemmed cherries for garnish

Heat oven to 350. Set aside chopped cherries & syrup. In large bowl, beat eggs. Add sugar & continue beating until well-mixed. Combine flour, baking powder, cinnamon,
baking soda & salt. Add to egg mixture alternately w/salad oil & reserved cherry syrup. Stir in chopped cherries, peeled & grated squash & walnuts. Mix well. Spoon into greased & floured 10 in. tube pan or 12 c. bundt pan. Bake 350 oven, 1 hr. & 10 min. Let stand in pan on wire rack for 10 min. Remove from pan & let cool completely. To serve, sprinkle w/confectioner's sugar and garnish w/ stemmed cherries.

Cherry Chip Jubilees

1 (18.25 ounce) box yellow cake mix
1/2 cup very soft butter
1 (6 ounce) package semisweet chocolate chips
1/2 cup walnuts or pecans
1/4 to 1/2 cup chopped maraschino cherries, drained well

Heat oven to 375 degrees F.

Combine cake mix, butter and egg in a large bowl. Stir in chocolate chips, nuts and cherries. Drop by rounded teaspoons on ungreased sheets. Bake for 10 to 12 minutes. Cool 1 minute before removing from baking sheet.

Makes 3 1/2 to 4 dozen.
