Here is tasty recipe using a very useful vegetable. Even non-vegetable eaters love it. Here goes:

1/2 cup seasoned bread crumbs
1/2 cup grated parmesan cheese
1 tsp garlic powder
2 eggs
5 tablespoons olive oil
1 zucchini cut into 1/4 inch slices
1 cup shredded mozzarella cheese

Fry zucchini in the olive oil until it get crispy and slightly browned.
Drain on paper towels. Clean the pan it was in and return it adding the shredded mozzarella cheese. Heat lightly until the cheese melts. Presto a fine addition to any meal.
