Leftovers

So, I know some people (me) are fine with working leftovers into the meal rotation and others just feel like they're icky. What's your opinion?

I try to make leftovers into something else if I can, like chopping up cooked chicken breasts and using in a casserole or some such. Or making leftover roast into soup, or using veggies in a casserole or soup.

Hubby doesn't like leftovers too much so I have to be creative. But I hate wasting food so I do my best. Worst case, I throw it in the freezer (if possible) and we eat it next month.
 
Theres so rarely leftovers in our house. We've luckily worked our cooking out so that it's just enough for two adults and a four year old. Our other daughter is almost nine months and doesn't eat much aside from breastmilk but sooner than we realize she will need to be worked in, too. On the rare occassion that we have some leftover food neither of us has a problem eating it but it's usually only enough for a snack or very small portion of a meal for one of us.
 
I'm so bad about being able to cook for only 2 of us. I don't know what my problem is. If I could master that, we'd have far fewer leftovers.

Then again, making a large amount to freeze for later isn't such a bad idea. Same effort, 2 meals. Of course, this only works with foods that freeze well. My recipes for chicken spaghetti, jambalaya, and red beans and rice all often find their way into the freezer, because they make a ton.
 
Were not big fans of leftovers at our house, DH job is mostly outside so he's rarely indoors were he can reheat leftovers, but I've gotten better about bringing this to work and eating to save money.

But I horrible at working them into my meal rotation for the rest of the week, I like the idea about adding leftover roast to soup. I'll have to remember that one for this fall/winter.
 
We're big fans of leftovers! We often pack them for lunch the next day and always enjoy meals that feed the two of us multiple times :).
 
Our family enjoys having leftovers as long as they really liked the dish the first time. I especially love leftovers because it means not having to make a meal entirely from scratch.
 
generally, i end up being the one finishing off the leftovers, for lunch. Although if the leftovers in question are pasta salads, I can persuade the kids to eat the bits they like.
 
We rarely eat leftovers. I wish we would get better at that. I've gotten to where I don't even save the leftover food after a meal, anymore. :confused:
 
I like leftovers. I as well like to have them for lunch the next day. My brother rarely has leftovers because he has this weird idea that he has to eat everything on his plate...and other peoples plates too....because he "doesnt like food to go to waste". I keep telling him that if can just save it and have leftovers...and it wont go to waste. :rolleyes:
 
I am a HUGE fan of leftovers. I am very busy at work and only get about a 15 min break a day. so just pop something in the microwave in the break room is the best. Its either leftovers or PB&J. both are good but leftovers are much better.
 
I love taking leftovers to lunch at work. I always eat in and I like reheated leftovers MUCH better than a sandwich.

We have too many leftovers and it IS a challenge, I have to admit, to always use them up, but I do try. Wasting food bothers me.
 
I love to take leftovers to work with me for lunch instead of eating out. Not only does it save money most times the leftovers are healthier than eating out. I am a firm believer that a hot lunch gives you fuel to make it through the rest of the work day.
 
I love leftovers. I eat them for lunch and send them with my husband to work so he won't buy food! I find that if I am going to do leftovers for dinner though, it works better to portion out the food right after cooking it and then put it away, not just put away what's left after we eat, KWIM? Or sometimes I prepare all the food and then portion it before even cooking it, like I'll make a whole lasagna and then cut it in half before baking it. It turns out better when not twice cooked.
 
That is a good thought about portioning the food out in advance. I did that recently with chicken spaghetti.

Sometimes I'll do that and immediately freeze one portion. That way, we're not eating "leftovers" immediately, but instead a few weeks later.
 
Yeah, that really helps with the feeling tired of eating the same things again and again.
 
I agree about the not eating it cooked twice definitely. Leftovers are good to me too :)
 
When I was a single girl, I'd make two batches of meatloaf at once, and freeze individual servings right away. That's not really leftovers, though, is it?
 
No, not leftovers, just good planning. :D

I haven't made meat loaf in awhile; I should make double the next time and freeze one. I tend to kind of forget about meat loaf most of the time. Don't know why that is. :confused:
 
I don't mind leftovers at all. I really should put more effort into cooking the proper amounts of food, but then if you have leftovers then that just means you don't have to cook every day. I love to cook but with my job it's sometimes hard to fit everything into the hours in the day.

Plus, we are trying to save money and it's helpful to stretch our food dollars.
 
I'm always eating leftovers, mainly because I don't eat much (I get full really fast) so there is always stuff "left over", and I'll just eat it later. I can take a meal that one regular, normal, not-weird person would eat in one go, and stretch it to 4 meals.
