Last nights Creativity. A mock Chicken Parmesan.
I made a very thin Omelet using 4 eggs, a bit of milk along with some Parmesan Cheese, Salt, pepper and a bit of Italian herbs whisked into the eggs.
I then cut the Omelet into quarters and coated as if I were making chicken cutlets. Seasoned flour, then egg wash then into seasoned bread crumbs.
I made a baked Ziti and nestled the cutlets between 2 layers of the pasta. I coated the cutlets with a bit of sauce, Mozarella cheese, and about 1/4 cup of Parmesan cheese before adding the 2nd layer of pasta. Topped the pasta off with more Mozarella cheese before it went into the oven to bake.
When I served this Everyone could not believe it wasn't chicken that I used for the cutlets. Yes, It tasted like chicken, lol.
