If you had the opportunity to learn a new cuisine, what would it be?

For me, North African is the new passion. If I could I'd be on a plane to Morocco to learn all I could about their style of home cooking.

How about the rest of you?

That's a hard one - I was brought up to cook foods from many different cultures - met many people from "the old countries" in my day - so I can say I was quite fortunate. I learned many old school ways from them - plus all I got from my own family of chefs, cooks and professional bakers.

But one thing I wish I would have gotten into more - marzipan - and how to make all those beautiful marzipan babies that look so real.
