...is coming up this Sunday, and on the potluck table I predict one thing I'll see is any number of Jello-molds and Jello-salads! My question is, what's YOUR fav jello?

I like a mold my Mom made when we were little w/ cherry jello, cherry pie filling, cream cheese torn into tiny bits and pecans. She also made one w/ peach jello, canned peaches, pecans, cream cheese torn into tiny bits and marshmallows. Yummy! My grandma used to make orange jello with shredded carrots, which many thought was weird, but we loved it. A neighbor made a mold w/ lemon jello, horseradish and olives- that was too weird for me to even try!

Oh my, I hardly make jello with the clients I work with now. A couple of them like plain red once in a while.
I use to do red jello with Waldorf stuff that was pretty and good.
Also round the holidays seeing one with cranberries and cream cheese.
A favorite with Alaska Marine Highway employees was lime with crushed pineaplle and finely chopped celery. Also the orange with carrots you mentioned.
Long time ago, I had a recipe with lime with canned pears, cottage cheese and a bit of ginger??
Also have you made the one where you put dry Jello and fruit in cottage cheese, I have not but remeber it going over very well.

Apricot Bavarian

6-oz. pkg. apricot gelatin
2 cups boiling water
1 cup sour cream
1 tsp. finely grated lemon peel
16-oz. can apricot halves, undrained


In large bowl, combine gelatin and boiling water and stir until gelatin is completely dissolved. Add sour cream and lemon peel and mix well with wire whisk. Chop apricots and add to gelatin mixture along with juice from can. Rinse a 6 cup mold with cold water and pour gelatin mixture into mold. Cover and refrigerate 4-6 hours until firm. Unmold and serve with fresh mint. 8 servings



Undescended Twinkies

Servings: 4

6 oz Orange Jell-O; (2 pkgs)
1 c ;Boiling Water
1/2 c Pineapple Juice
1 qt Vanilla Ice Cream; Softened
7 oz 7-Up
8 ea Twinkies

Dissolve Jell-O in boiling water. Add pineapple juice, ice cream and
7-Up. Mix thoroughly (In a blender if necessary to dissolve ice cream),
and pour into a deep pan, approximately 9-inches square. Chill until
mixture begins to set. Lay Twinkies, flat side down, in two rows of four
across the top of the chilled gelatin. If the gelatin is properly
chilled, it will resist the Twinkies. You will push them in and they will
slowly rise. Remember you don't want them buried. Just semi-decended in
the ooze. Chill until fully set and serve.



Gelatin Ambrosia Salad

1 small box orange gelatin
1 can mandarin oranges, drained
1 cup boiling water
3/4 cup fruit juice or water
1 can small pineapple chunks, drained
1 banana, diced
1 cup flaked coconut
1 1/2 cups sour cream
1 cup miniature marshmallows

Dissolve the gelatin in boiling water. Add fruit juice. Refrigerate until gelatin begins to set.

Mix remaining ingredients together and chill.

Stir the fruit mixture into the syrupy gelatin mixture. Mix thoroughly to keep the fruit from rising to the top. Refrigerate until firm.

I wish you a fantastic Family Reunion, and I hope more deviled eggs, and cake and potato salads than jello dishes show up (all things that I carry to family reunions) - but if I were doing a jello it would be a strawberry with mixed fruit cocktail on one layer a second layer of orange jello with vanilla ice cream melted into it, and topped off with a third layer of raspberry jello with miniature rainbow colored marshmallows mixed in. When I plated it I would do so on a round platter, and then pipe large whipped cream stars around the outer edge and one large dollop on top with a cherry and mint leaves for garnish.

{and I hope you nail down that individual that scarfed your Mom's wall plaque from S&H :D } I just could not resist that one, and I know you'd never do it but ya' could always hire MamaM & me we'd get it back for you and Mama ya' wouldn't even have to buy cement I have 3 1/2 bags unopened in the shed!!!:D

Hmmm... I'll have to research a recipe for the cottage cheese one you mention, Nan. I love cot. chz. with either canned peaches or applesauce. I think I'd enjoy the jello preparation, too! I eat a lot of jello 'cause my nails have always been thin and the jello helps make them thicker and keeps them strong. Plus- I just like it!

...mama's and cathy's offerings sound delish too! Wow! Jello... is there a more versatile jiggly food, anywhere? Hee-Hee! (and THANX, Cath!)

(ALSO- BECAUSE I'VE BEEN ASKED IN A PM- THE "THING" I APPEAR TO BE PICKING MY NOSE WITH IN MY AVATAR IS A CRAW-DADDY! AND I'M NOT PICKING MY NOSE W/ IT! I WAS BEING STUPID AND JOKING AROUND AND ACTUALLY SUFFERED A BIT OF A MISHAP WITH IT! CRAZY ME!)
