Hey guys,

I got the stove top smoker in the mail today. How about giving me some recipes to try. I always have some chicken thighs, legs, wings and whole chickens in the freezer so how about some recipes for smoking chicken. Some rub recipes would be appreciated.

Im really looking forward to going to the Wal Mart in Ashland and getting one of those big pieces of salmon to smoke.
Were getting some veggies from the garden. Can you smoke those and how would I?

Can you smoke jalapenos and store them?

Janie, anything can be smoked. But not everything can be smoked the same way.

Jalapenos, for instance, have to be smoke-dried to make chioptles. This is done in a cylindrical basket over a smokey fire. Because they are thick walled and relatively high in moisture content, air drying doesn't work in most places. And you can't just have them sit on the rack in your stovetop smoker, unless you're going to use them right away---in which case I would cut them in half the longway first.

As I mentioned before, all your stovetop gadget does is impart a smoky flavor to foods---which have to be otherwise cooked as well. Keep that in mind. It does not do the same job as an outdoor smoker, or your grill set on indirect heat.

For chicken, I think all I would do is sprinkle it with smoke salt before putting it in the unit, then I'd finish it on top of the stove by simple pan frying. Here is my recipe for smoking salt---which I use as a basic seasoning as well:

1 cantainer (1 lb 10 oz) table salt
1 tbls onion salt
2 tbls celery salt
1 tbls garlic salt
2 tbls paprika
4 tbls white pepper
2 tbls dill salt
4 tbls white sugar

Stir ingredients together until well blended. Store in an air-tight container.

I also have this Rival brand smoker I got last year.

I would love to smoke some jalapenos and then dry them out to make powder.
