What is your favorite pancake mix? Mine is the one that Aldi's sells believe it or not. The pancakes always come out nice and fluffy and it only costs me 99 cents! Thanks for sharing

I have a couple:

Aunt Jemima's Pancake Mix

2 cups Self-rising flour
2 cups Bisquick
1/2 cup Sugar
1/2 cup Nondairy creamer powder

TO USE THE MIX:

1 Egg
8 ounces 7up
1 3/4 cups prepared pancake mix

THE MIX: In an 8cup container, stir together flour, Bisquick, sugar and creamer. Cover tightly. Refrigerate mix to use within 3 months.
Makes 7 cups of mix.

TO USE: Into blender, put egg, 7up and prepared pancake mix. Blend at high speed until smooth, 1 minute. Allow 1/3 cup batter for each 6" pancake.

Athough I prefer pure maple syrup - I do run out at times but this is easy to make:

Aunt Jemima Maple Syrup

2 Cups Water
1 Cup Granulated Sugar
2 Cups Dark Corn Syrup
ΒΌ Tsp Salt
1 Tsp Maple Flavouring

Combine The First Four Ingredients In A Saucepan Over Medium
Heat. Stir Occasionally, Until The Mixture Comes To A Full Boil. Let
It Boil For 7 Minutes.
Turn The Heat Off & Let The Syrup Cool For 15 Minutes.
Add The Maple Flavouring & Stir.
When Completely Cool, Transfer The Syrup To A Covered Plastic Or Glass Container.
Makes 1 Quart.

OR:

Homemade Maple Syrup

1 3/4 cups sugar
1/4 cup brown sugar
1 cup water

1/2 tsp vanilla extract
1/2 tsp maple flavoring

* Combine first three ingredients in a saucepan and bring to a boil.
* Cook 1 minute. Remove from heat.
* Stir in vanilla and maple.
* If saucepan is covered as the syrup cools, there will be less crystallizing of the syrup.

ULTIMATE BUTTERMILK PANCAKE AND WAFFLE MIX

Makes 4 quarts of wonderful mix to give as gifts.

Ingredients:

8 cups all-purpose flour
2 cups whole wheat flour
1 1/2 cups buckwheat flour
1 cup corn flour
1/2 cup stone ground cornmeal
1/2 cup instant oatmeal, powdered in blender
2 cups buttermilk powder
5 tablespoons baking powder
2 tablespoons baking soda
1/4 cup vanilla powder
1 1/4 cups granulated sugar
3 tablespoons salt
2 tablespoons malt powder (optional)

In an extra large bowl, using a strong wire whisk, blend all-purpose
flour, whole wheat flour, buckwheat flour, corn flour, cornmeal,
powdered oatmeal, baking powder, baking soda, vanilla powder, sugar,
salt and malt (if using). Place mix into four 1 quart jars (you may
need to tap the bottoms to get it all to fit) and store in a cool,
dry place for up to one year.

NOTE: Whole wheat flour can go rancid if it gets too warm, so it may be a good idea to refrigerate this mix if you do not have a very cool
place to store it.

Attach the following instructions on a gift tag:

Please refrigerate this mix until used.

Ultimate Waffles or Pancakes

I'm a plain ol' bisquick girl myself. Although, I'm more likely to make waffles than pancakes (I like a little crunch), bisquick works just fine for us. :)

I have not found a pancake mix that I like, although Aunt Jemima will do in a pinch.

I really don't care for Bisquick at all; it seems very tasteless. I like my pancakes a little sweet so maybe that's the problem. I do use Bisquick sometimes for dumplings but that's about it.

White King's pancake mix is delicious. But my aunt's own pancake mix is the best. She uses flour, baking soda, egg, baking powder and a pinch of sugar. She has also formulated different flavors. Sometimes she mixes it with chocolate; sometimes she mixes it with cheese or fruits. Pancakes also taste good with syrup that is commonly available at the supermarkets.
