I have some carrots and celery that have been in my crisper for awhile (they're still good), but I need to use them up. Besides a roast, what else can I do w/these veggies? I'd like to use them in a yummy recipe. Could I cut them up and freeze them for future use? Or would they turn into mush when they're defrosted?

I have never tried freezing carrots or celery. I would just make a salad or snack on them

casseroles, stews, soups, veggie dishes...............or stuffings, salads...........

I have frozen celery before, chopped in baggies, for cooking with later. I do a lot of Cajun cooking and pretty much everything has celery in it, so that works for me.

I have a recipe which I believe I have posted here, for creamy ham casserole, which calls for carrots. It's pretty yummy.
