Tjhere are a lot of good suggestions here as far as knives go, but I would also add that once you buy a good knife, go get a good sharpener and learn to use it. I have one that I bought at a hunting supply shop. It was inexpensive and very simple to use, and lets me put a nice edge on my knives any time I notice them getting a little dull.
