Hi...Just curious if anyone knows a simple, healthy,: recipe for potato salad without using bacon. The easier the better!! Thanks!! Of course with spring coming up it makes a great light side dish.
I make an easy one - steam or boil taters, cool completely.
Add chopped celery, onion (optional), hard-cooked eggs, chopped sweet pickles or sweet pickle relish, mayo or salad dressing and sometimes a dab of yellow mustard.
Of course, at times and depending on who I was feeding, maybe minced red sweet pepper, minced carrot or - instead of mayo/salad dressing - olive oil and vinegar - season with salt and pepper.

That recipe sounds delicious. Probably try it with the oil and vinegar. Maybe add some sugar?? Carrots are a natural sweetener. Have to experiement with eastern potatoes... Thanks again

You're welcomed and you can add 1 - 2tablespoons sugar to the vinegar and stir to dissolve (depends on how much you are making)
