Freezing cheese depends on the cheese you are freezing. Sliced, shredded or block - just depends on the cheese itself. I never freeze cheese for too long - even a good cheese that freezes well will be crappy if left in the freezer too long. I've frozen plenty of cheese and the fact that it was frozen never effected the texture or taste!
