You guys have any thoughts or opinions (or recipes) for electric smokers? I have always used my upright Cajun Cooker for smoking but the wife bought this electric a decade ago and I would like to try it. It would be nice to cover the element with soaked wood chips, load the two racks and plug the thing in.

I felt the same way when I bought my first electric char-b-q - but it grew on me quickly. It's nice to use when you can't get outside to grill because your house is buried in snow!

Mine is 100% outside. It's just an upright smoker but with an electric element in the bottom. Your element is covered with "lava rock" and you cover that with soaked wood chips. It belches out smoke just like a charcoal smoker only you don't have to light it or keep adding charcoal. You do have to add more wood chips if you run it for a long time.

I used to want a stove with the built in grill and the huge overhead hood for venting till I found out that is you are using the grill you can't get your stove burners or oven to heat up! A friend of mine has a BBQ pit (restaurant) where they BBQ everything outside no matter what the weather. Because of our weather here, they cook on the good days and freeze everything (which I am against) and then warm it on the grill with sauce as they get orders. They have huge freezers stocked with cooked meats.
