Lentil Burgers


2 cups cooked and cooled lentil/bulgur mixture ; see below
1 cup bread crumbs
1 egg equivalent
1 tablespoon seasoning of your choice basil ; oregano, etc
1/2 cup chopped onion
1/2 cup chopped pepper
2 cloves minced garlic
1/2 cup nonfat milk/soymilk

Combine all ingredients except milk and mix well. Stir in milk. Chill for 30 minutes. Form chilled mixture into patties and bake at 350F for 10 minutes on each side, or "fry" in a skillet for 10 minutes on each side. Cooked burgers freeze well and need only a minute or so to be reheated.

Lentil Bulgur mixture:
Mix equal parts of dry lentils and bulgur wheat. Combine 1 part dry grains with 2 parts water in a saucepan. Bring to a boil and simmer until all the liquid is absorbed, about 30 to 45 minutes. You can season the water or use stock if you like.
