1/4 cup dairy free margarine
1 large yellow onion, chopped
2 cloves of garlic - crushed
2 1/2 pounds chopped fresh spinach
salt and pepper to tast
3 tablespoons flour
3/4 cup rice or soy milk

Melt 2 tablespoons of the margarine in a pan over medium heat, add the onion and saute until soft but not brown - about 3 minutes. Add the garlic, spinach, salt and pepper and saute until just wilted.

In another pan melt the rest of the margarine over med/low heat, whisk in the flour and cook for a minute, slowly whisk in the rice milk and cook until the sauce begins to thicken about 4-5 minutes (do not boil). Combine the sauce with the spinach and enjoy!

I am really interested with your recipe. I will try to cook this one when I have a free time. My husband would be surprised with this new recipe I have learned. Hopefully I would be able to cook this recipe well. I'll update you about this. Thanks.

That is a nice and tasty recipe you got there! I personally love spinach. Maybe you can change the vegetables from spinach to brocoli or cauli flower maybe? I think there can be lots of variations in this recipe.
