This has to be the easiest dinner I made in a while.

Frozen Catfish Fillets
Canjun Seasoning

Place the frozen catfish fillets in a non stick skillet. Sprinkle with a Cajun / Louisana Seasoning. Heat the pan, and sautee about 7 mintutes. Turn the catfish fillets over, and sprinkle with a little more Cajun seasoning. Cook for 4 -5 minutes. Turn over once more time and cook until fillet begins to brown.

We serve this with Red Beans and Rice. Makes a quick and tasty meal.
 
I love this; I make it all the time.

Though, mine has a slight variation; I mix the blackening spices myself and then keep a small container of them handy so I just have to rub it over the fish and cook.
 
You know I just love the taste of catfish. I normally just fry them with seafood breader. But this sounds too easy and I always have cajun seasoning around so I will try this next time I get some catfish. thanks alot
 
I used to get fresh catfish that was already seasoned with a cajun seasoning at my local grocery store but they stopped carrying it. Is there a particular brand of cajun seasoning that you use, or are they all about the same. I really liked the cajun catfish, and miss it, so I'd love to try this way.
 
I'm not a big fish eater but I do lover a good catfish either cajun seasoned or Zatarain's fish fry seasoning batter. It has been a long time since I have made catfish and you have reminded me how good it is. I will have to make that for dinner one night soon.

Do you prefer to use frozen or fresh catfish fillets and why?
 
Anyone barbecue these catfish? For some reason, I'd feel the desire to barbecue fish but expect they'd fall apart and onto the fire. So if you have experience, how do you do it and do you have something special to cook the catfish on?
 
You can grill fish by using a piece of nonstick aluminum foil. Make a tray with the aluminum foil. Start with a piece of foil that is slightly larger than the fish you want to grill. Take the sides of the foil and fold them up. Place the foil to the side of the coals and place the fish on the foil. I find have 2 large spatulas makes flipping the fish easier and keeps it from falling apart. Cook until done.

You can also buy 1 of several commercial products for grilling fish. Some look like 2 sided wire baskets, some are flat screens or flat metal with holes in it.
