I promise, no cheating tonight! My chicken has already thawed so I *must* use it. The glassware I use to make it in is clean so I can't use that as an excess either. Besides, it sounds really tasty. I think I'll make up some nice whole wheat pasta to go with it tonight.

You know what would go good with the chicken is tomatoes and cucumber salad. This is easy to make, and since summer is here, it's time to eat tomatoes!

To make this salad peel, then cut a cucumber in slices. If you have a large cucumber, cut the cucumber in half lengthwise before slicing. Then remove the top core from large tomatoes, and cut in half, and then again into quarters. Dice up some onion. To make a serving, place some of the cucumbers in a salad bowl, top with the tomatoes, and then the onions. Then add a little Italian salad dressing. If you want to add fiber to your diet you can add some chick peas (aka garbonzo beans).

This is real great salad when made with garden fresh cucumbers, and tomatoes.

Hah, cheating? Somedays I'm too tired after a day's work I eat ice cream with Kellog's frosties and some chocolate syrup for dinner. Then again for breakfast the following day. Yum! :D

But I do cook some "real" meals too, though. I was experimenting the other night and created my "masterpiece"--Soy asparagus, with fried tofu and nuts. It may seem weird but it's delish. :)

Ooo, soy asparagus? That sounds very good. I'm not always up for asparagus but if it's done right I've found that I actually enjoy it. I'm the goof that of course eats from the bottom up and doesn't like the top part.
