My two week (hubby gets paid every 2 weeks & it's easier for us to go shopping payday than every week) menu is:

Sat: Zesty Chicken & Rice Skillet
Sun: Cheesy Meatball Skillet
Mon: Cheesy Ham & Rice Bake
Tues: Sloppy Joe Skillet
Wed: Parmesan Bow-Tie Skillet
Thurs: No-Fuss Tex-Mex Roll-Ups
Fri: All-in-One Pork Chop Bake
Sat (My birthday): Pizzas
Sun: Fiesta Chicken Pasta
Mon: Chicken Fried Steak
Tues: Brown Sugar Pork Chops
Wed: Better-than-Ever Beef Enchiladas
Thurs: All-in-One Pork Chop Bake (it was my daughter's idea to have this twice)
Fri: Weeknight Lasagna Toss

Now, we don't usually stick exactly to the menu. Like yesterday, since it was just me & the girls, I made some hamburgers instead of the meatball skillet. And tonight, I'm craving enchiladas, so we'll be having those now instead of next week. I try to stick as close to the menu as possible though. I may change what day I make something, but usually I make everything on my menu. :cool:

Tracy, what I've found to help me is to keep a copy of it posted on the freezer door so that I can see what package of meat to pull out & another one by the stove so that when I go to cook, I can see what I'm 'supposed' to make & get the recipe.

Sunday dinner out
Monday - Spagetthi, garlic bread and a salad
Tuesday - Roast with potatoes and carrots, salad
Wednesday - Mole enchiladas with rice
Thursday - Soup and Sandwichs
Friday - Steak, baked potatoe, corn and salad
Saturday - Dinner out

I'm terrible at preplanning menus. I have several things that are always in the food rotation and I just cook whatever sounds good on any given night.

the stand-bys....

chicken pot pie
mexican cornbread casserole
mexican or chicken & mushroom pizza
chicken & rice (sometimes with rotel, sometimes with just green peas)
chicken quesadillas (every sunday night)
baked ziti
bean & cheese burritos
homemade chicken and noodles
