I will make turkey tacos and burritos one night. We usually have some ham left over as well so I will make ham salad sandwiches. Also I will cook down the ham bone and have ham and cabbage one night.

The turkey carcass will make a great pot of stock! So definitely - soup and if to much - frozen stock for future recipes. Cubed turkey will be make a great topping for a nice green salad. I freeze some of the meat so that I can warm it up with BBQ sauce later and don't foget to slice some turkey and freeze with gravy for sandwiches later.

And of course - there is the traditional turkey salad sandwiches, turkey for casseroles, etc.

I froze our turkey, dressing and gravy. We left town for a few days, so I'll bring them back out when we return. It'll make for a nice dinner some night when there's no time to cook.

I love turkey sandwiches with gravy.

I never thought about making stock out of the carcass. I will have to remember that for next year. I like the idea of adding BBQ sauce to the turkey. I have never tried that either.
