Curious. What would you use xanthan gum for? I've seen it in product ingredient lists, but never have seen a recipe calling for it.

Well my daughter has some severe allergies so it helps to provied structure in gluten-free baking by trapping the gas produced by yeast, baking soda, or baking powder so when you bake something it will rise.

So you mix it into the bread dough that is made with a gluten free grain. Got it.
