Cooler weather calls for stew, chili or soup. Cornbread is not a must have for some people. But for me it is the best bread for quick and good bread. This is a new recipe for me. I found it really good. Hope you do to. CF

Chile cheese cornbread muffins

1 cup Cornmeal (blue or yellow)
1 cup Flour
1/4 cup Sugar
1 Tablespoon Baking powder
1 teaspoons Salt
1 Egg; beaten
1 cup Milk
2 Tablespoon Butter
1 Onion med. diced

1 can Diced Chiles; or fresh
1/4 lb Cheddar cheese; shredded

Melt butter in pan; add onions and sauté until nicely brown. Take off heat. In
bowl
combine dry ingredients and cheese and Chiles. Combine egg and milk
and add to dry stuff. Beat until mixed. Add onions.
Put into 12 muffin papers and bake at 400 degrees for 15-20 minutes
or until brown. Additional cheese can placed on top of muffins if

I love cornbread! I may make some with my corn soup this week.

The bread was good but it did stick to the muffin cups. We ate it anyway. CF

I'm going to pour mine in a baking pan - cut however I want.

I usually bake mine in my cast iron skillet, I was just trying to be fancy. it didn't work. plain or old fashioned is always best. CF
