Eggs Florentine Benedict

Here's a great lower fat breakfast as a replacement when you just have the urge for Eggs Benedict.

Saute spinach, shallots and mushrooms with a little salt & pepper and a pinch of cayenne.

Poach an egg.

Toast an English muffin.

Stack spinach mixture on muffin. Top with egg. Grate fresh Parmesan cheese on top.

Tampa and Sarasota are nice places to live my Dad did 25 years in St. Pete and it is neat. How long have you been in FL? Have you ever heard of Thononassassa? Lots of nice starwberry fields over there! If you like picking them, that is! FL is a great state no matter how you look at it!

I've been here about 20 years. Thonotsassa isn't far from Plant City, which is the strawberry capital.

baffling approach to building membership, but heh . . .
 
In addtion to Eggs Florentine, another great Eggs Benedict alternative is to place a pair of jiggly poached eggs atop a crispy pair of pan-fried crabcakes and top w/ mornay sauce (which is just bechamel w/ gruyere or parmesan cheese and a pinch of nutmeg whisked-in.) Yummy!
 
SilverSage, that's an awesome alternative recipe to Eggs Benedict. Sometimes I don't feel like chowing down on a heavy Hollandaise sauce. I'm totally craving breakfast right now.
