Ingredient:

3/4 C plus 2 Tbls. all-purpose flour
1/4 C cornstarch
1 Tbls. unsweetened cocoa powder
1/2 tsp. baking powder
3/4 C butter, softened
1/3 C sugar
1 Tbls. honey
1 tsp. vanilla
3/4 C sweetened coconut, toasted, divided


Directions:

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.

Combine the flour, cornstarch, cocoa and baking powder in a medium bowl. Mix well. Set aside.

Combine the butter, sugar, honey and vanilla in a large bowl. Beat with an electric mixer set on medium speed until light and fluffy, 1 to 2 minutes. Add the flour mixture to the butter mixture. Reduce speed to low. Beat until blended, about 1 minute longer. Stir in 6 Tbls. coconut.

Shape the dough into twenty-eight 1 1/4 inch balls. Place the dough balls 2 inches apart on the prepared baking sheets. flatten slightly.

For the topping, sprinkle the remaining coconut evenly over each cookie. Lightly press the coconut into the dough.

Bake until the cookies are set, 7 to 9 minutes. Cool for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

These are thin and crispy cookies and delicious. Enjoy. :)

Two things - first of all -

CF - c'mon and get the lead out of those drawers! Fire up that oven! Let's get going here! time for some Geritol to keep you moving! LOL - just teasing......

Secondly - I have many recipes that call for coconut - which I do not eat - so I just omit it - great recipes without it too!
And you can always cut the coconut in half - and half to the batter and make the other half plain for yourself.

Mama, your right about the lead. But the temps here are still 103°-107°. I just want to sit with a cool drink and do nothing.
We like coconut a lot. I did buy a fresh one last week. Haven't done anything with it yet. Yep, I need to get with the program. CF:)
