Oatmeal Date-Nut Cookies

Ingredients:

2 Tbls. butter
1/2 C brown sugar
1/2 C granulated sugar
1 egg
2 egg whites
1 tsp. vanilla
1 Tbls. skim milk
1 C presifted all-purpose flour
1/2 tsp. baking soda
1/2 tsp. double acting baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 C uncooked, quick rolled oats
1/2 C chopped dates
1/4 C chopped pecans


Directions:

Preheat oven to 350 degrees. Cream butter and sugars. Beat in egg, egg whites, vanilla and milk.

Sift together remaining dry ingredients, except the oats. Beat dry mixture into the wet ingredients. When smooth, stir in oats, then dates and nuts. Mix well.

Spray cookie sheet with 2 coats of non-stick oil. Drop large tbls. of batter 2 inches apart on cookie sheet. Bake 10 to 12 minutes or until light golden brown. Enjoy!! :):)
