Does anyone know a tried and true zucchini bread recipe? I tried a sample at my farmer's market and loved it.

2 8"x4" loaf pans, well greased and floured
2 C Sugar
1 C Vegetable Oil
2 tsp Vanilla
3 C All Purpose Flour
2 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Salt
1 1/2 tsp Cinnamon
3/4 tsp Nutmeg
1/2 C Chopped Nuts, optional, I use walnuts
1 C Raisins, optional
2 C Shredded Zucchini
1 8oz can Crushed Pineapple, well drained
Beat eggs in medium bowl until light & fluffy. Add all remaining ingredients to eggs. Divide between prepared pans. Bake at 350F 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes, then finish cooling on wire racks.
This recipe is also good made like cupcakes. Another twist is to add 2 C mini chocolate chips to batter just before baking.
