To preserve the appearance of fancy frozen desserts, freeze unwrapped until solid, then cover tightly with plastic wrap, then foil, and return to freezer in airtight container for protection. Unwrap while still frozen.

Thawing Tips: Unwrap while still frozen and let thaw on serving plate in refrigerator.

Along these lines, if you want to bake a cake ahead of time and freeze it, this works well, but you should freeze it unfrosted. You can then thaw and frost it when it gets close to serving time.
