Extreme Meatloaf



1 lb. lean ground beef
1/4 C chopped green olives
1/4 C black olives
1 tsp. chopped fresh cilantro
1/4 C chopped jalapeño peppers
1/2 C catsup
2 eggs
1/2 C breadcrumbs
1 T Worcestershire sauce
1 oz. tequila
8 oz. fresh parmesan cheese

Preheat oven to 325° F.

Beat eggs, add cilantro, chopped peppers, worcestershire, tequila and pour mixture into bowl with other ingredients. Stir until mixed. Form into extreme loaf. Grate fresh parmesan cheese over entire loaf. Cook for 45-60 minutes uncovered.

Serve with frozen margaritas with or without alcohol. Serve slice with twice-baked potatoes and caesar salad and be extreme.

Nice recipe. I would leave the cheese off, but I just might try it.

The jalapenos are an interesting idea. I have a TON of them in my garden, perhaps here is one way to use them up..
