meat loaf

A friend made meatloaf that looked so good I had to make it. As usual when I want to make something, I don't quite have everything, so I improvise a bit.

This one has :

1 lb Jimmy Dean sausage roll

2 lbs ground beef
sauteed onions, sweet red peppers and celery

minced garlic
some bread crumbs
worchestershire sauce

3eggs
Fresh cracked black pepper
Rick's Real Pit BBQ Rub
oregano
rosemary
celery seed
and paprika

All formed up and ready for the oven

Nice, Rick. I'm a huge fan of meatloaf. Heck- I don't know whether I prefer it better hot w/ spuds & gravy- or mac & cheese, or cold- on sandwiches the next day!

Here it is all finished. It was good but I really couldn't taste the sausage. Next time I think I'll cut the ground beef down or increase the sausage

I also added BBQ sauce on top for the last 1/2 hour

I agree, the sausage sounds like a great addition to the ground beef. I never thought about adding other meats. Thanks for the idea and great job on your meatloafs!
