Pappardelle Pasta

Ingredients:

1/2 C onion - about one medium
1/2 C carrot
1/2 C celery
1/4 C olive oil
10 oz. turkey breast, cubed
3 C chopped tomatoes
2 bay leaves
1/2 tsp. salt
1/4 tsp. ground black pepper
4 C pappardelle or extra-wide egg noodles
1/4 tsp. cinnamon
1 1/4 C Alfredo sauce
1 1/4 C shredded Swiss cheese
1/4 C shredded Parmesan cheese


Directions:

Lightly spray a 13X9-inch baking dish with nonstick cooking spray. Chop the onion, carrot and celery.

Heat the oil in a large skillet over medium heat. Add the onion, carrot and celery. Cook, stirring occasionally, until the onion is softened, 4 to 5 minutes. Add the turkey. Cook, stirring occasionally, until the turkey is lightly browned, about 5 minutes longer.

Reduce heat to low. Add the tomatoes, bay leaves, salt and pepper to the skillet. Cook, stirring occasionally, until the turkey is cooked through, about 20 minutes.

Meanwhile, cook the pasta according to pkg. directions. Drain. Return the pasta to the pot.

Preheat oven to 400 degrees. Remove the bay leaves from the turkey mixture. Stir in the cinnamon. Stir the turkey mixture into the cooked noodles in the pot. Stir in the Alfredo sauce and Swiss cheese. Spoon the turkey mixture into the prepared baking dish. Sprinkle evenly with the Parmesan. Bake until lightly browned, 15 to 20 minutes. Serve immediately.
