Pork Tenderloin with Apples


1 package pork tenderloins, about 1 1/2 to 2 pounds
1 large (or 2 small) Granny Smith apple, chopped
1/4 cup applesauce
1 bunch green onions with about 3 inches of green tops, slice thinly
1 tablespoon brown sugar
1 tablespoon balsamic vinegar (or cider vinegar)

Trim excess fat from the pork and slice in 1 1/2-inch pieces. Place pork slices in the slow cooker/Crock Pot with the remaining ingredients, mixing to combine. Cover and cook on low for 7 to 9 hours.

Thank you for the wonderful recipes incorporating apples into each dish! Think I will have to do the pork & apple one and then try the enchillada's!

Mmmmm that sounds delicious.. Think i am going to try this on Wednesday when the GF starts school..and the young Lad is at school..and I start being the Head Chef.. Sounds great.. Thank you!:rolleyes:

This is my husbands recipe. One of my favorites.

Pork Tenderlion with and Green Pepper Flambe

4 Pork Tenderloin Fillets
1/2 cup chopped Onion
2 cloves minced Garlic
1 Tbs Green Peppercorns
1/2 cup Brandy
1 Tbs Dijon mustard
6 oz Heavy Cream
1 chopped Red Delicious Apple skin on.

Method:

Sear tenderloin fillets in a skillet.
Remove from skillet, save grease.
Add onion, peppercorns and garlic to grease.
Mash peppercorns with fork to release flavor in skillet.
Return fillets to skillet.
Add Dijon mustard.
Add brandy.
Tilt skillet to ignite brandy.
Add heavy cream and chopped apple.
Reduce on low heat to thicken.
Serve on Sweet potatos or sweet potato fries.
