Honey-Glazed Salmon

2 Tablespoons minced shallots or onion
1 Tablespoon minced fresh or 1 teaspoon dried thyme (I omitted this)
3 Tablespoons honey
1 Tablespoon Dijon mustard
1/4 teaspoon ground red pepper
4 (6 oz) salmon fillets (~ 1" thick)
thyme sprigs (I omitted these)

Preheat grill or broiler. Combine first 5 ingredients and 1/2 teaspoon salt in small bowl (I omitted the salt). Place fillets, skin sides down, on grill rack or broiler pan coated with cooking spray. Brush honey mixture over fish; cook 8 minutes or until fish flakes easily when tested with a fork. Garnish with thyme sprigs, if desired. Yield: 4 servings.
