Cod Fish Salad
1-1/2 pounds bacalao (salt codfish), cooked and shredded

1 large potato, boiled, peeled and cut into chunks

1 medium Spanish onion, peeled and minced

1 avocado, peeled and cut into chunks

3 hard-boiled eggs, sliced

1 red and 1 yellow bell pepper, seeded and cut into strips

1 tomato, seeded and chopped

1/3 cup white vinegar

1 cup olive oil

salt and pepper to taste

In a serving bowl, combine the codfish with the potato, onion, avocado, egg, peppers, and tomato. In a separate bowl, combine the vinegar and oil and season to taste. Pour the dressing over the codfish mixture and toss well

My Way

Cod fish soaked over night then boiled lightly.then slightly shredded

chop up purple onions

chop up scotch bonnets

garlic shredded carrots, shredded spring onions, shredded celery, cut up arugala,olives wine vinegar and olive oil and lemon juice.

it turned out quite good. served with Jamaican crackers.

The chicken pot pie sounds great and I too am not a fan of peas. I will have to try this on my day off Thursday. Thanks!

I made the pot pie recipe for dinner tonight and it was delicious! I was really pleased with how much it thickened up. My husband and son had seconds and thirds! Thanks!

looks good - but I dont see any peas - LOL! (we love peas - but they can easily be left out)

I HAVE to make a flakey buttery homemade crust for my chicken pot pie. If I don't I am always disappointed. =)
