6 to 8 garlic cloves
1/4 teaspoon salt
2 egg yolks
1 cup olive oil
1 lemon

Crush garlic cloves thoroughly in a mortar and pound in salt. In a bowl blend the garlic and salt with the egg yolks. masher olive oil and adding a few drops, being vigorously with a whisk or rotary beater. Continue adding oil, and a little at a time, until about two tablespoons of been added. Add the rest of the oil in a thin steady stream, beating constantly. Finish the sauce with the juice of one lemon and seasoning with salt and freshly ground pepper to taste.
