Apple Butter

12 cups apple pulp
3 cups sugar (3 to 4)
3 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp allspice
1/4 cup vinegar

Combine and cook slowly until thick, several hours. Can; process 15-20
minutes in boiling water bath.
Makes 10 half-pints.
