Apple Butter Pumpkin Pie

I made this pie at Christmas and my family just gobbled it down - and this is a bunch that doesn't, as a rule, much like pumpkin pie!

Ingredients:
1 C Apple butter
1 C fresh or canned pumpkin
1/2 C packed brown sugar
1/2 tsp. salt
3/4 tsp. ground cinnamon
3/4 tsp. ground nutmeg
1/8 tsp. ground ginger
3 eggs slightly beaten
3/4 C evaporated milk
1 unbaked 9" pie shell
Sweetened whipped cream for garnish

Directions:
Preheat oven to 425 degrees F

Combine apple butter, pumpkin, sugar, salt and spices in a bowl. Stir in eggs.
Gradually add milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set.

A tasty topping for this pie is praline pecans.

On occasion, while baking, the top of this pie will crack but it doesn't hurt anything and does not detract. Several other friends who've made this have had the same thing happen and nobody seems to have found a way to prevent the cracking.:eek:

Thanks, Kevin, for your positive comments. However, honestly forbids me from taking credit I don't deserve! This recipe is one I picked up from a Paula Deen cooking show a couple of years ago. I guess most recipes usually originated somewhere, though, didn't they?;)
