Buttercrunch Popcorn

1/2 cup unpopped popcorn
1 cup light brown sugar, packed
1/2 cup light corn syrup
1/2 cup butter or margarine
1/4 cup butterscotch chips
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups peanuts or almonds, toasted

Heat oven to 250 degrees F.
Grease a 14x10" roasting pan.
Pop the popcorn.
Put the nuts and popcorn in a very large bowl.
Bring the brown sugar, corn syrup and butter to boil, stirring until the sugar is dissolved.
Reduce the heat and cook for 5 minutes.
Remove from heat.
Stir in the butterscotch chips, vanilla, baking soda and salt until everything is blended and smooth.
Working quickly, and using two wooden spoons, pour the syrup over the popcorn and nuts.
Stir to coat thoroughly.
Pour the mixture into the pan.
Bake for 45 minutes, stirring occasionally.
Remove from the oven, cool mixture in pan for about 15 minutes.
Turn the mixture out of pan onto foil to cool completely.
Break the popcorn into smaller pieces.
Store in an airtight containers in cool dry place.

can I share this one?

1 c. butter
2 c. brown sugar
1/2 c. light corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 qt. popped popcorn
1 1/2 c. pecan halves
1 c. sunflower nuts (meats only)


Preheat oven to 250 degrees F.
Bring butter, sugar, syrup, and salt to a boil over medium heat, stirring constantly. Boil without stirring for 5 minutes.
Remove from heat and stir in soda and vanilla. Pour syrup over mixture of corn, nuts, and pecans in a large bowl. Mix well,
Bake in 2 large shallow pans or one large roasting pan for 1 hour, stirring every 15 minutes.

The buttercrunch should come with a warning label. It is sooo good!
I made Jon's Dad a batch for his BD today. Of course I had to try it. I used a whole jar of dry roasted peanuts cause his Dad loves peanuts. I almost melted some milk chocolate to drizzle onto it but his Dad keeps his house pretty hot and it would make a melted mess really quick. That stupid air popper I got died after two uses. I knew $5 was to big of a bargain to be true when I bought it. I ended up popping the rest of it in a pan and sorting through all of it to make sure there were no kernels.

I think I will give Mama's recipe a try next. Thanks for sharing.

That does sound like it. I plan to make Jon the peanut butter popcorn and drizzle it with chocolate or maybe white chocolate. He doesnt like butterscotch anything.

Peanut Butter Popcorn

1/2 cup light corn syrup (or golden syrup)
1/2 cup sugar
1/2 cup peanut butter
1 teaspoon vanilla
6-8 cups popped popcorn


In small pan melt together corn syrup and sugar.
Add peanut butter and melt.
Be careful not to boil mixture too much, the peanut butter will start to burn.
Remove from heat and stir in vanilla.
Stir mixture over popcorn.

I made this a few months ago, and I don't know how I forgot to rate it! It was delicious! So sweet and peanut buttery, it was just what a peanut butter fiend like me needed! Thanks for the awesome recipe. Update: Though I do love this popcorn, I thought it was a little soft. So to crisp it up, I put it in the oven at 250 for 30 minutes, stirring it at 15 minutes. It turned out wonderfully crispy, just like caramel corn! From now on, I'll bake it in the oven after mixing it all together.
