I remember Christmas at my grandma's house topped off with lucious, warm pieces of this special cake.

Ingredients:
2 1/4 C cake flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 C vegetable oil
1 C sugar
2 eggs
1 C buttermilk
1 C whole, uncooked cranberries
1 C chopped pecans
1 C chopped dates
grated peel of three oranges
1 C sugar
1 C orange juice

Directions:
Preheat oven to 350 degrees

Sift flour, salt, baking soda and baking powder together in a large bowl. In a separate bowl, beat the oil, sugar, eggs and buttermilk. Add in the flour mixture into the egg mixture. Add cranberries, , pecans, dates and orange peel. Mix thoroughly. Grease casserole dish and pour in batter for cake. Bake for 40 to 50 minutes or until knife inserted in center comes out clean. Heat the sugar and orange juice in small saucepan, just until the sugar is dissolved. Spoon mixture over warm cake. Let the cake sit overnight before cutting. Serve rewarmed. Cranberry-licious!!
